I suppose no one on here will catch the play on words, but that's ok. It's not 1967. Anyway, today I attempted my first batch of totally organic baby food. I have to say that it was a success on my part. Everything turned out to the proper consistency and thickness, and my enameled cast iron pots worked like a charm! I am anti-teflon with a passion. Call me old fashioned, but i'll stick to a light coating of olive oil and forgo the cancer thank you very much. :)
I made 3 sets of food today, and I personally tried all of them. I found them to be quite yummy, and nothing like the nasty jars of food in supermarkets. Not that they are bad, I just find them gross personally. I am also not a baby, so it really doesn't matter. :) I made a batch of apple and carrot medley, fresh peas, fresh green beans and oven roasted sweet potatoes. Although the sweet potatoes never made it to their recipient as I sampled them too many times. I was hungary, and they turned out so well! The apple carrot medley was by far the easiest to make, I recommend starting with simple recipes. Making your own food isn't rocket science, but getting the right consistencies can be a little tricky with extra ingredients.
Here is the recipe for the Apple Carrot Medley:
1 pound-fresh, organic peeled baby carrots
1 cup- unsweetened applesauce
1 tsp.-olive oil
1/2 cup-water
Bring water and olive oil to a gentle rolling boil on high heat, add carrots and reduce heat to medium-low. Simmer in a covered pan for 12 minutes until carrots become tender. Open lid and simmer for an additional 4 to 6 minutes until all (or most) of the water has evaporated and the carrots are shiny and tender.
Add carrots and applesauce to a food processor and blend until consistency desired. You can thin the food with formula, breast milk or even water if so desired.
Store in an air tight container in the fridge for up to 3 days OR store in a freezer safe baby food container for up to 2 months.
